| Old Time Christmas Cookies |

Ingredients:
1/2 cup Shortening
1/3 cup Sugar
2/3 cup Honey
1 tsp. Lemon extract
2 3/4 cups Flour
1 tsp. Baking soda
1 tsp. Salt
1 Egg
Kitchen ware:
Electric mixer
2 medium bowls
Plastic wrap
Cookie sheet
Wire rack
Directions:
1. Cream the sugar, shortening, egg, honey and lemon extract in a medium bowl.
2. Combine flour, baking soda, and salt in other medium bowl.
3. Combine flour mixture to shortening mixture.
4. Wrap in plastic wrap and chill at least one hour.
5. Roll out dough to 1/4" thickness, cut cookies.
6. Place cookies on lightly greased cookie sheet, 1 inch apart.
7. Bake at 350F for 8 to 10 minutes.
8. Cool on sheet for several minutes, than transfer to wire rack.
9. When cooled, cookies may be iced.
