Citrus Squares
Ingredients:
3/4 cup All-purpose flour
1/4 cup Shortening
4 tblsp. (1/2 stick) Butter, cut up
1 1/4 cups Sugar
1/4 1/8 tsp. salt (Divided; 1/4 and 1/8)
1/2 cup Sour cream
5 large Eggs
1/3 cup Lime juice (about 3 limes)
1/4 cup Lemon juice (about 2 lemons)
2 tsp. Grated lemon peel
Confectioners' sugar for garnish


Kitchen wares:
Food processor
13" by 9" metal baking pan
Medium bowl
Whisk
Wire rack

Directions:
1. Preheat oven to 400F.

2. In food processor with knife blade attached, blend 1/4 tsp. salt, 1/4 cup sugar, flour, shortening, and butter, pulsing processor on and off until crumbs form.

3. With processor running, through the hole in the top of your device, add two to three tblsp. cold water, one tblsp. at a time, pulsing processor on and off until dough comes together.

4. Press dough onto bottom and 1/4 inch up sides of the baking pan.

5. With fork, pierce the dough in many places to prevent puffing during baking.

6. Bake 15 to 20 minutes or until lightly browned.

7. Remove crust from oven. Turn oven control to 375F.

8. In the medium bowl, with whisk, beat the eggs, sour cream, one cup sugar, and 1/8 tsp. salt until well blended.

9. Mix in the lemon, lime juices and lemon peel until well blended.

10. Pour the citrus mixture over the warm crust in pan; bake 15 minutes or until just set (Note: do not overbake or the citrus filling might crack).

11. Remove the pan to the wire rack; let it completly cool.

12. After it is cool, refrigerate.

13. Serve it while it is still cold and lightly sprinkle it with confectioners' sugar.
