Divinity Fudge
Ingredients:
1/2 cup Water
1/2 tsp. Vanilla
1 tsp. White vinegar
1 Stiffly Beaten egg white
1 1/2 cups Brown sugar
1/2 cup of Nuts (Pecan is a good choice)

Kitchen wares:
Heavy two quart saucepan
Candy thermometer
Wax paper

Directions:

1. Combine the water, brown sugar and vinegar in the heavy 2 quart saucepan.

2. Cook over medium heat, stirring continuously until the sugar dissolves and mixture begins to boil.

3. Cook it to 250F without stirring.

4. Remove it from the heat immediately and gradually pour it over the stiffly beaten egg white, beating until it is thick and the mixture holds its shape.

5. Fold in the cup of nuts and the vanilla.

6. Drop the fudge by teaspoonfuls onto some waxed paper or spread on buttered pan and cut into squares.


This recipe makes about 2 dozen pieces.
