| Chocolate-Covered Cherries |
Ingredients:
3 3/4 cups (1 pound) powdered sugar
2 cups walnuts, chopped finely
2 cups flaked coconut
2 sticks butter, softened
1 1/3 cup creamy peanut butter
75 maraschino cherries with stems
2 (12 oz) packages of chocolate chips
1/4 block paraffin wax
Kitchen ware:
Paper towels
Large Bowl
Bouble boiler
Wax paper
Directions:
1. Drain cherries on paper towels.
2. Mix sugar, nuts, flaked coconut, butter and peanut butter together in large bowl.
3. Roll mixture into little balls (about an inch in diameter).
4. Poke a hole in the center of each ball, and insert cherry.
5. Gently press dough around cherry, leaving only the stem showing.
6. Set aside.
7. Melt paraffin in top of double boiler.
8. Add chocolate chips, and stir until melted.
9. Holding cherries by stem, dip into chocolate.
10. Place chocolate covered cherries on cookie sheet, lined with wax paper.
11. Refrigerate until firm.
