| Cherry Vanilla Fudge |
Ingredients:
1/2 cups Milk
2 tsp. Vanilla
1/4 cups Light corn syrup
1 cup Light cream
3 cups Sugar
1/2 tsp. Salt
1 cup Candied cherries; quartered
2 tblsp. Butter or margarine
Kitchen wares:
Heavy saucepan
Large bowl
Candy thermometer
Well buttered eight or nine inch square pan
Directions:
1. Combine the milk, cream, corn syrup, sugar, salt and butter in the heavy saucepan.
2. Cook over medium heat, stirring continuously, until mixture comes to boiling.
3. Continue cooking, stirring occasionally, until candy thermometer reaches 238F.
4. Remove it from the heat, leaving thermometer in the saucepan. Cool to 100F.
5. Add vanilla. Beat briskly until the fudge thickens and begins to lose its gloss.
6 .Stir in the cup of cherries.
7. Pour into buttered square pan. Let cool. Cut into squares when firm.
This recipe makes about 1 3/4 pounds.
